For those that are not familiar with Lake Pontchartrain it is a large lake in the New Orleans Area as a native we go fishing, Crabbing, Shrimping in the lake all the time while we were looking for a name to go with this sauce Mike my friend that built my house suggested that we call it Ponchartrain because it goes so well with seafood so that is how we came up with the name.

 Makes a great table sauce for seafood dishes or any other types of food.
